I made this as a dinner this week with enough leftovers to have for lunch, but this would also make a great meal prep recipe to cook up for the week! I lightened up the original recipe to fit my macros by using light cream cheese and 2% cheddar. I also saved myself some time chopping veggies by subbing in frozen variations instead.
