Summer has officially come to an end and fall is right around the corner. Tomorrow we move on to the season of pumpkin spice, leggings, and football...
As sad as this makes me, I'm looking forward to sharing some new recipes with you and hope to give you the motivation to continue all the great work you've put in all summer.
Here's what my meal plan looks like this week...
It's fantasy football draft weekend in my house, so leftover burgers from the guys came in handy for an easy lunch. I also discovered a gem in the frozen section from Perdue - a ready to cook frozen turkey breast! If you're looking for an easy throw in the oven and walk away kind of meal, I'd highly recommend trying one out. It roasts right in the bag and came out delicious! Pair it with a little cauliflower rice or other veggie and BAM another pack and go lunch for the week.
(Tip: Put turkey in oven first, then prep the rest of the meals while it cooks)
Since the oven was already going, I decided to try out a new flax seed muffin recipe. Put a dab of natural peanut butter on those for a quick afternoon snack. Click the link for a free copy!
Breakfast bowls are another go-to of mine. Just scramble some eggs, cook up the bacon and potato and top bowls with arugula and salsa. Pop one in the microwave in the morning as you're running out the door for a hot and balanced breakfast.
There you have it! A week of breakfasts, lunches, and snacks in about 2 hours!
