What a beautiful weekend we're having here in PA! I can't think of any other place where you can have all 4 seasons in one day... Waking up feels like winter, by noon it's spring, summer rolls in around 3pm, then we hit fall at 7pm. No idea, but dress in layers and enjoy the sun while it lasts
I'm mixing it up this week with meal prep. Instead of prepping all my meals on Sunday, I decided to show you another approach!
The biggest gripe about meal prepping I hear is the time it takes to put it all together. So many people say they're too busy to take the time out to do it or simply just don't want to. If this sounds like you, I have a solution...
Another great way to plan your meals for the week is by using leftover dinners for your lunches the next day. As long as you don't mind eating a lot of the same things, cooking extra portions at dinner can save you a ton of extra planning and time!
Just add a serving or two to your nightly dinner and pack a portion for lunch the next day. This cook once, eat twice approach makes planning a lot easier and limits prep work to your breakfast and snacks.
For breakfast, I decided to try out a couple new recipes - Almond Oatmeal Breakfast Bars and Baked Broccoli and Feta Egg Cups.
I've included the recipe for the Almond Oatmeal Breakfast Bars below. I substituted the maple syrup for a sugar free kind and added a scoop of protein. I tried one fresh out of the oven and they are DELISH! 🙂
For Monday, I'll just throw together a quick snack box for lunch then use my dinner leftovers the rest of the week. Cut up some veggies and/or grab a piece of fruit for your snack and you have your whole week planned and ready to go!
