Meal Prep Sunday 9/29/19


I can't believe we're already down to the last weekend of September!  I hope my pumpkin spice recipe book helped get you in a Fall mood this week.

I'm off with the fam enjoying some of the fall festivities this weekend, so I decided to stick with my cook once, eat twice meal plan.  I prepped breakfast and planned my dinners so I can use leftovers for lunches all week.

The Chicken Ranch Spaghetti Squash recipe peaked my interest so we'll see how it turns out!  I'll share it later in the week if I think it's a win.

The Sticky Cinnabon Oatmeal is a great breakfast for a cool morning.  I made it ahead of time and will just heat up a serving in the morning with a little almond milk.  I'm convinced the kids will enjoy this one too!  You can download the recipe here:


I went ahead and made the Beef and Broccoli dinner since I work late that night.  You can serve it over pre-made brown rice or frozen cauliflower rice for a lower carb option. It literally took minutes to make, so would be an easy throw together after school kind of meal if you're in a hurry.
